Melanie Krook, a senior double major in Biochemistry and French, was awarded the American Chemical Society Agriculture and Food Chemistry Division Undergraduate Research Award at the ACS National meeting in Boston on August 24, 2010





Melanie Krook, a senior double major in Biochemistry and French, was awarded the American Chemical Society Agriculture and Food Chemistry Division Undergraduate Research Award at the ACS National meeting in Boston on August 24, 2010. Melanie was selected based on an oral presentation at the National meeting. She was awarded $1000 of travel support and a $500 cash prize.


Melanie has conducted independent research with Dr. Ann Hagerman since fall 2008. She has worked on the stability of polyphenols found in foods using a model for mammalian digestive conditions. Polyphenols, which are found in foods ranging from green tea to blueberries, are believed to contribute to human health and longevity, but little is known about the fate of the compounds after their consumption. Melanie designed a system for determining stability of the compounds during digestion using an instrumental method, HPLC, to track the recovery of the compounds. She added digestive enzymes and also added model foods to evaluate stability under realistic conditions. She compared several different compounds, and found that their stability is different. Some compounds are stabilized by a food matrix but others are not. Melanie plans to conclude her research during 2010-2011 by exploring how food stabilizes some compounds against degradation. Her work will be submitted for publication in the ACS journal Agricultural and Food Chemistry.


Melanie conducted research at Northwestern University during summer 2010. During summer 2009, she was a USS scholar at Miami university and during 2009-10, and 2010-11 she has been a Dean’s scholar at Miami. She plans to pursue a doctoral degree in Biochemistry after graduation.
