2 cups quick-cooking oats

½ cup diced dried fruit (raisins, cranberries, apricots, etc)

½ cup chopped nuts

1 teaspoon cinnamon

¼ teaspoon salt (you may skip the salt if the peanuts are salted)

½ cup packed brown sugar

2 Tablespoons honey

¼ cup plus 2 Tablespoons margarine

1/3 cup mini chocolate chips –optional

¼ cup sunflower or pumpkin seeds – optional, but healthy and delicious!!

1. Lightly spray 8” x 8” pan. Preheat oven to 350°.

  1. In a small saucepan, melt butter, brown sugar, and honey on medium heat.

  1. In a large bowl, combine oats, fruit, nuts, cinnamon, and salt.

  1. Pour butter mixture into bowl with oats. Use a rubber scraper to get all of the butter out of the saucepan.

  1. Stir to combine all ingredients. Carefully fold in chocolate chips and sunflower seeds if desired. The chocolate chips are added last so they won’t melt!!

  1. Put mixture into prepared pan. Place a 12”square of waxed paper on top of the oat mixture. Press down on the waxed paper firmly and evenly. Press the mixture down very firmly so the bars won’t crumble when taken out of the pan.

Take off the waxed paper!!!

  1. Bake 20 - 25 minutes or until edges of granola are lightly browned.

  1. Remove pan from oven and cut into 8 bars while granola is still warm, so the bars won’t shatter when cool. Then completely cool the bars in the pan.
