Chapter 19—Basic Nutrition
Stop and Think Discussion Points
Mrs. Giovanni was recently admitted to your long-term care facility. She is a bit underweight, and her doctor wants her to consume more calories each day. The problem is that Mrs. Giovanni will only eat about half of her meal at meal time. She says, “I just get full quickly.”
What are some ways you may be able to help Mrs. Giovanni improve her nutritional intake?
Ask her about her favourite types of food and if they bring special memories.
Ask her about her meal time routines.
Share her favourite food information with the nurse.
Offer her small amounts of her favourite types of food throughout the day.
Nutritional supplements may be ordered. Make sure they are served at the proper temperature and at the ordered time.
You work in an assisted living facility and one of your residents, Mr. Wayne, has severe arthritis in his hands. The arthritis makes it hard for Mr. Wayne to use his silverware, but he refuses to let you help him eat. He says that he’ll let you feed him “if and when they cut off both of my hands!” Lately the arthritis has gotten much worse, and Mr. Wayne is having more and more difficulty eating. Most of the food winds up beside the plate instead of in his mouth, and what little food makes it to his mouth is ice-cold by the time it gets there. You know that Mr. Wayne has to eat to maintain his health.
What can you do to assist Mr. Wayne in feeding himself?
Offer privacy and plenty of time for his meal.
Ask if Mr. Wayne’s meals can be provided in small pieces that could be eaten with the fingers instead of needing a utensil.
Make sure to share your observations with the nurse.
What member of the staff could you ask to assist you?
The dietitian could help provide “finger-food” meals that are easier for Mr. Wayne to manage.
The therapist could assist Mr. Wayne with assistive devices such as plate rims and special utensils that are easier for him to hold.
